Cous Cous with peas, seitan and entire hemp seeds

Procedure:

Put the couscous into a large mixing bowl, add 2 tablespoons of oil and mix.

Take a saucepan of salted water ( 300ml) and boil it.

Pour the hot water into mixing bowl with couscous and pour it, cover the bowl and wait for 2 minutes. Add 1 tablespoon of oil, mix and cook over low heat for 2 minutes adding the mint leaves.

Peel and slice onion, cook it in a pot with oil for 3 minutes adding 2 tablespoons of water. Add the peas and salt and black pepper to taste. After 5 minutes add the white wine and cook over high heat.

Cut seitan into thin strips adding to peas and cook them for 5 minutes

Take a small pan and roasted hemp seeds for 3 minutes, then add them to the couscous and combine.

Wash the cherry tomatoes and cut them in a separate large bowl, adding oil and salt to taste.

Pour the couscous into cherry tomatoes salad and combine.

Enjoy this simple and nutritious dish, delicious even cold!!!

This is quick and energetic food, perfect meal “to eat at you desk”! ( It’s better to prepare it the night before)

250 gr cous cous
300 gr peans
4 teaspoons entire hemp seeds
6-7 cherry tomatoes
1/2 onion
4 mint leaves
½ glass white wine
3 tablespoons extra virgin olive oil
to taste salt and black pepper
