Vegan omlet with shelled hemp seeds

Method:
Wash the zucchini and boil them; when it will be ready, cut them into small pieces.
In a bowl put the millet flour and add water gradually, stirring with a whisk to avoid creating lumps form a dense and velvety cream.
Then add a pinch of turmeric, grated a bit ‘of nutmeg, salt, pepper, shelled hemp seeds #Strabuono and stir to mix well.
In a frying pan put extra virgin olive oil add the batter prepared with the zucchini..
Cook with a high heat for a few minutes, distributing evenly the dough. Cover with a lid, reduce heat and cook for 7-8 minutes, until the batter thickens.
After 3 a minutes, turn the omelette, but you can do it, if you are not able to turn it whole, cutting it with a wooden spoon, into four segments, and turning a slice at a time.
Serve it hot with your favourite vegetables.
