Artichoke salad with hemp seeds

Clean the artichoks pealing off the outside leafs and the stem. If the artichokes have little thorns on the end of the petals, take a knife or a kitchen scissors and cut of the thorned tips.
Cut the artichoks in 2 pieces and clean it with frash water. Place them into a bowl of water with half of the lemon juice to prevent them from browning.
Take 1 lemon and wash it, cutting in 2 portions and get the juice. Cut the lemon peels and boile it for 2 minutes in a small pot of salted water, make sure to cut out all of the white part.

Whisk lemon juice, hemp oil and extra virgin olive oil in a small bowl until well combined. Add a pinch of salt and black pepper. Blend with a fork.
Cut the artichok in thin slices, put them on a plate and pour the vinagret on top of them.
Let it set for 5 minutes, then add some fresh thime and mint leaf, the lemon peel and 2 tablespoons of entire hemp seeds and 2 tablaspoons of shelled hemp seeds.

5 Artichoks
T.t. Extra Vergin Olive oil
2 tablespoons hemp oil
1 sprig fresh thyme
3-4 leaves mint
2 tbsp entire hemp seeds
2 tbsp shelled hemp seeds
T.t. salt and black pepper
