Vegan Croissan with Hemp flour
Dissolve yeast in warm water, if you want to opt for an alternative, you can substitute water with soy milk or rice milk.
Mix and combine the flours in large bowl. Pour the flours on a wood table, adding the yeast previusly dissolve and start kneading. After 2 minutes add and incorporate sugar, malt, oil, vanilla sugar and a pinch of salt. Knead it until the dough is elastic and smooth.
Cover the dough with a cloth and let it rise for 3 hours at room temperature.
Roll out the dough, pressing gently and giving it a round shape.
Cur triangles into the dough, fill them with one spoon of jam, honey or cream. Pull on the corners of the shortest edge, to even up the base of the triangle. Then gently stretch the dough a little. Then roll the dough up.
Cover loosely with cling film and leave to rise in a cool place for around 2 hours.
Preheat the oven to 180°C and cook them for 15 minutes.
Brush the croissants with honey and seeds using a pastry brush.
