Gnocchi with rocket pesto
The gnocchi with rocket pesto with shelled hemp seeds, is a very simple recipe and it need a few simple ingredients.
Wash well and dry the rocket with a clean cotton cloth.
Pour into the blender the garlic and the shelled hemp seeds. Blend for a few seconds then add the grated parmesan and finally the rocket, water and oil. Blend for 2-3 minutes until the pesto reaches a creamy consistency, then season with salt and pepper and pour into a bowl.
Partially cook the gnocchi in salted water, just come to the surface drain and toss it with fresh rocket pesto.
If necessary, add a little oil to thicken better by making them jump around a minute over high heat.
Serve your gnocchi with rocket pesto with some slivers of parmesan.
If you forward the pesto, you can store it in a glass jar and store in the refrigerator for 2 or 3 days.
