Tagliolini pasta with pesto avocado
Take a large pot of salted water and boil it. Add the tagliolini Senatore Strabuono and cook them according to packet instructions.
Cut the ripe avocados in a bowl emptying them with a spoon. Add oil, salt and a handful of fresh basil leaves.
Reduce the ingredients in a cream with an immersion blender.
Toasted the pine nuts, and put them in a blender for a few seconds. Will give the dish a pleasant crisp note.
Transfer your cream in a bowl and add the Parmesan cheese (for vegan version, add a generous sprinkling of chopped hemp seed).
Drain the pasta and mix it in a pan with avocado cream adding a ladle of the cooking water that have kept aside, to have an even more creamy and enveloping taste.
Serve the dish accompanied by some fresh basil leaves.
