Hemp Pasta with asparagus stuffing

In a bowl stir together all the flours creating a fountain. Add the salted water.

Knead until the mixture is homogenous and smooth dough. Put everything in a bowl and let stand for about 30 minutes covered with a cloth.

Roll it out with a rolling pin finely and then stretch it into long strips. Cut the dough strips into squares of about 5 cm.

Clean the asparagus and cut into slices or cubes. Put two tablespoons of oil in a pan and add the asparagus. Cook them for a few minutes on high heat, then add a bit of water, lower the heat, cover with a lid and cook for about 15-20 minutes.

Take a blender and put almost all the asparagus with 3 teaspoons of parmesan or grana cheese, extra virgin olive oil and blend them into a soft dough.

Here is the filling for your pasta.

Take a square at a time, put a teaspoon of cream of asparagus and cover with another square squeezing well the edges of the dough to do not escape the filling.

Take a large pot of salted water and cook your hemp pasta for 4-5 minutes.

Serve with additional Parmesan and a few bits of asparagus as a garnish and color this dish #Strabuono.

250 gr wheat flour (fresh pasta)
20 gr hemp flour (for fresh pasta)
150 ml water (for fresh pasta)
20 asparagus
to taste Grana cheese
to taste salt
to taste extra virgin olives oil
