Vegan red chicory cakes with shelled hemp seeds

Method:
Take the red chicory and cut it into small pieces. Cook it in a pot with 4 tablespoons of extra virgin olive oil and skip the vegetables. Add the shallots cutted into large pieces.

Then when everything is still crisp, add the fresh thyme.
Now take a roll of ready vegan puff pastry and cut it into medium squares with raised edges forming a small cups.

Prick the puff pastry with a fork and bake at 180 degrees for 20 minutes, until they are golden.
When they are completely cold, fill them with vegetables and 1 teaspoon of shelled hemp seeds.
Great appetizer or even as #Strabuono outline.

200 gr wheat flour
100 gr amaranth Flour
4 red chicory
5 shallots
to taste Fresh thyme
to taste extra virgin olive oil
to taste shelled hemp seed
to taste salt
