Rice balls with pumpkin

The rice balls with pumpkin are perfect for “recycle” your rice with pumpkin or any other type of rice if you have cooked a bit more. Your guests and your children will love it and will not stop more than eat. If you do not have leftover rice, cook the rise in a pot of salted water, cook it for 20minutes or following the box instructions, than drain and let cool.

Remove the pumpking’s peel then wash it and cut it into cubes. Cook the pumpkin in a pot with a little bit of extra virgin olive oil and a pinch of salt. After 10-15 minutes, the pumpkin is cooked, add it to the rice along with 3 tablespoons of whole hemp seeds, mix everything.

In a bowl, whisk the eggs with a pinch of pepper and salt. Cut the Asiago cheese into small cubes and start to roll into balls with your laughter with pumpkin filling them in with some piece of cheese.

Once you have finished to compose your balls, dip in the eggs and then in breadcrumbs.

You can cook in preheated oven at 180° placing them on a baking sheet covered with parchment paper, or for an exception to the rule, you can fry them in hot oil.

You just have to enjoy them, serve hot but beware to the cheese heart.

300g Rice brown
250g Pumpkin
2 Eggs
150g Asiago cheese
1 red hot chilli pepper
3 tbls Entire Hemp Seeds
to taste Extra virgin olive oil
to taste breadcrumbs
